One 2-inch square piece of kombu (dried kelp)
1 cup unseasoned rice vinegar
½ cup granulated sugar
¼ cup kosher salt
For the Rice
3 cups short-grain white rice (“sushi rice”)

all i can say is please don't use old , leftover rice…….. i just got thru eating sushi from the local grocer and the rice was leftover…. dull taste
