As someone with 2/3rds of a chemical engineering degree (for now), this video is infuriating. It's not bad, but it's mostly foolproof, which has its own ups and downs. Just to name a few issues I've had so far, specific parts (like just the part you cook on) CAN independently get seasoned and (totally pure) water won't rust a pan, those are just in the first minute and a half. The reasons why those not-totally-true simplification aren't all bad and make this video foolproof is pans tend to season as a whole because of the nature of the seasoning process although parts of a pan can season independently – as for water, it's very hard to find and maintain incredibly deoxygenated water and if you were to leave some on a pan it would eventually oxygenate and begin oxidizing (rusting) the pan.
I know cooking and strict sciences conflict on a lot of things (just look at fruits and vegetables in cooking vs biology) but DAMN

last year my parents went all over my town and found the only store that had one of these left and got it for me for my birthday, i now am a proud owner of a very large,perfectly beautiful cast iron, im also terrified of using it cuz its so different from a regular one. But my gosh is it great, i usually sear and use the oven so its perfect that i can just throw it all in there with whatever seasoning and vegetables i need. and cleaning isnt that hard once you get used to it- will try your version aswell! If you have interest in making food, this is the one product you NEED in your kitchen, nevermind anything else!

What major benefits do cast irons have over other pans?
This seems like a lot of extra crap to maintain it. Also seems like it has more limitations in regards to cooking.
The great thing about cast iron pans is how most of them fit neatly into the garbage can. Any stainless steel pan of the appropriate thickness will do anything a cast iron pan can do, and it's cheaper, easier to care for and lighter to boot. If you don't believe me, ask yourself why steel woks work so well for stir frying as opposed to a regular steel pan.
I also use my cast iron skillet for making biscuits. Or I'll grab the cast iron round griddle. They're both also good for making pizza.
I have been cooking with cast iron for years. Would never use anything else. Just simply reliable.
