#1 Don’t waste your time taking the steak out 20 minutes before cooking it. It accomplishes NOTHING.
#2 Do not wait the last minute to salt your steak. Add salt AT LEAST 45 minutes before cooking it! (one or two days is even better!)
#3 Get yourself a good instant read thermometer, pushing your thumb in the palm of your hand DOES NOT WORK!
#4 Searing the steak DOES NOT seal in the juices. (its only purpose is to create a delicious crust)
#5 Be sure to let it rest at least 10 minutes after taking it out of the oven. Before cutting into it.

I've always salted my steaks for around an hour or so but I never thought about going a day or two and I tried it. It makes the crust AMAZING! This is how you get a great crust just like he said. Mine were salted and in the fridge for roughly, thirty hours. I will always be doing this from now on! Worked in the broiler as well as the frying pan. Both steaks had amazing crusts and they both had just the right amount of salt flavor.

Chef JP, just curious if your cooktop in these videos is induction. My townhome came with a glass cooktop on the range, but it isn’t an induction cooktop and I’ve found its temperature control to be less than satisfactory. One of these days I’ll replace it with either a gas (need to run a short line into kitchen from furnace) or an induction cooktop (which I’ve never had opportunity to use). My pans are all cast iron or stainless tri-ply, so they should work well with either. While the vast majority of TV and internet cooks I see still use gas ranges, most of those also still use the horizontal cut prepping an onyon. I would appreciate hearing your opinion on the different types of cooktops. BTW, your knife and vegetable videos are so informative!!!
Would love to see you do something like a pheasant supremes in cream sauce recipe, maybe with an angel hair pasta or fettuccine. I get quite a few wild birds (mostly pheasant and grouse, also a few doves and partridge) during hunting season and have found that due to the much smaller size and leanness of wild bird breasts (~3-4 oz per supreme for pheasant) than commercial chicken breasts they can be a difficult substitution in chicken breast recipes (I’m very thankful for my Thermapen). Thanks for all your great videos and please keep them coming!

I searched for prime rib tutorial and came across Chef Jean-Pierre's one. Tried it and was AMAZING!!! it was also my first time making it, my family was shocked. It´s 04:21am, I just finished my Fifa 23 weekend league, and I am watching a man cooking a steak.
This is the video that is changing my way of doing steaks. Thanks for the time to differ the salts. I have to tell you that I cook my big steaks in a pan, but turn them every 4 minutes. A thick rib steak takes about 15 to 18 minutes to cook medium as for a filet mignon takes 20 to 25 minutes unless having the cuts across the top and bottom sides.
